It’s so funny how so many posts on this sub are “how can I be more lazy?”
It takes, what, 2 minutes to peel and dice a sweet potato? You’re seriously asking how you can skip that so that you can take HOURS in a slow cooker to process it instead?
This just in: cooking involves work. Go to McDonalds if you don’t want to do any prep at all. 🙄

You don’t really need to peel anddice them, of course. You could simply roast them in your slow cooker or the oven and when they’re done, cut them open and scoop out the cooked inside.
It depends what you’re trying to do, but if you need to dice them then yes you’re gonna have to put in that amount of effort.
Oh, I just thought of one more thing. If you don’t want to peel them, then you could ask someone to peel it for you. But seriously if you want a peeled result, then you will have to peel the potatoes.

Throw them in the microwave till soft lol

I do it two ways. First for skin on ones I plan to eat whole I bake in the oven, coated in butter on the skins. I usually bake 8-10 at a time to make it worth the energy costs. Then I freeze them wrapped individually in butcher paper and tin foil. The second way is skinned, diced, cubed or sliced and steamed in the instant pot. Those get frozen laid out on a cookie sheet lined with a silicone mat. Then when frozen through they go in ziplock bags in 1 cup measure.
