I was hyped to see burrata on the menu this week because I don’t think I have seen Hellofresh use this ingredient before, but I don’t think that Hellofresh used it to its full potential. Overall I enjoyed the rich creaminess of the burrata and cream cheese together, but I think the choice of cream cheese over something like mascarpone was budget motivated.

I also felt like the dish needed something else to make it spark. There was acid, fat, salt, but not a real heat component unless you count a clove of garlic. Most burrata pasta recipes on the internet seem to include a tomato sauce of some type, and I think that is a wise choice to add more complexity to the dish instead of only using pasta water. Pasta water is cheaper, and they seem to have cut down ingredients in recipes recently.

Ultimately, I added some chili flakes and a little balsamic glaze because I had that at hand, and the heat improved this a lot for me. My husband seemed to really enjoy it, as is.

    I have this arriving tomorrow. Thanks for the suggestions. I will add the good balsamic vinegar I have and some crushed Aleppo chilies.
