A pretty busy recipe to make, and will require a lot of dishes to clean. That being said, the dish is actually really tasty! Everything is well-seasoned and each element of the bowl brings a new texture/flavor. For those who are also going to make this recipe in the future, I have the following recommendations:

  1. Toasted the couscous in a bit of butter (if you don’t mind the dish not being vegan). It will bring more flavor and depth.
  2. Don’t over-drizzle olive oil into the kale. I know it says to use a lot, but be a little sparing. It took forever for me to dry it out to a crispy texture, and I eventually gave up and broiled it for a few minutes.
  3. For those with 2 servings, ignore the recipe and use the whole packet of maple syrup. It’ll turn out great if you caramelize the carrots in it. Trust the process.
