
Ingredients you'll need:
- Shredded mozzarella cheese: 1 1/2 cups (170g)
- Cream cheese: 2 tbsp (30g)
- Almond flour: 3/4 cup (90g)
- Baking powder: 1 tsp
- Egg: 1 large
- Garlic powder: 1 tsp
- Salt: 1/4 tsp
- Butter, melted: 2 tbsp
- Fresh parsley, chopped (optional): 1 tbsp, chopped
- Grated Parmesan cheese (optional): 2 tbsp
Instructions:
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 1 minute, or until the cheese is melted and smooth when stirred.
In a separate bowl, mix together the almond flour, baking powder, garlic powder, and salt.
Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms. It may be sticky, but that’s okay.
Place the dough between two sheets of parchment paper and roll it out into a rectangular shape, about 1/4 inch thick.
Transfer the rolled dough to the prepared baking sheet. Use a pizza cutter or sharp knife to cut the dough into breadstick shapes.
Bake for 12-15 minutes, or until the breadsticks are golden brown and cooked through.
While the breadsticks are baking, melt the butter and mix it with chopped parsley and grated Parmesan cheese, if using.
Brush the baked breadsticks with the garlic butter mixture as soon as they come out of the oven.
Allow the breadsticks to cool slightly before serving.

Can attest that this is an excellent recipe. Mine is usually fairly oily, so I bake them in a lasagne pan rather than on a sheet. First batch was on a sheet, and wow what a mess.
Any tips for those of us who do not have a microwave?
