As cool weather arrives in Autumn here’s one of my favourite recipes to cook on a chilly day. Hortobagyi Palacsinta are Hungarian Meat Stuffed Crepes, slathered in a creamy paprika sauce. The perfect comfort food!

    # Ingredients

    # Crepes

    * 3 Eggs
    * 1/4 tsp Kosher Salt
    * 2 cups Flour
    * 2 cups Milk
    * 1/4 cup Melted Butter

    # Filling

    * 2 tbsp Olive Oil
    * 1 Large Vidalia Onion finely chopped
    * 1 Green Bell Pepper cored, seeded, finely chopped
    * 1.25 lb Ground Veal or Beef
    * 3 Garlic Cloves minced
    * 28 oz Can Crushed Tomatoes
    * 1.5 tbsp Paprika
    * Salt and Pepper
    * 1/4 cup Fresh Parsley chopped

    # Sauce

    * 3 tbsp Unsalted Butter
    * 3 tbsp All Purpose Flour
    * 1 1/3 cup Sour Cream
    * Chopped Fresh DIll garnish
