In this video I show how the Lebanese Pizza is made. These flatbread from the Arabic area are called Manakish. I show you how to prepare the dough and I show you two different versions of toppings. At the end we bake Manakish.

Ingredients for 3 Manakish:

500g Flour Typo 0 or All-Purpose Flour
300g cold Water
0,6g dry Yeast or 1,8g fresh Yeast
25g Olive Oil
15g fine Sea Salt

Ingredients for the Za’atar:
1 TS Thyme
1 TS Marjoram
1 TS Oregano
1 TS Sumac
2 TS Sesame Seed
0,5 TS fine Sea Salt
6 TS Olive Oil (or even more – it must be a spreadable paste)

Roast the sesame.
Mix the herbs and mill them. Add the sesame. Mix all with olive oil until you get a spreadable paste.

Or mix the ready Za’atar-mix with olive oil.

Cheese Topping – normally Akkawi cheese should be used
80g Feta or Halloumi
80g Mozzarella, Emmentaler or Gouda (grated)
2 TS Parsley or Oregano
1 small Onion

Procedure:
Pour the water into a bowl, add the flour and the yeast and knead everything for around 5-10 minutes. Now add the salt and continue kneading. After 5 minutes add the olive oil and knead until you can make the window test.
Let the dough airtight rest for 30 minutes.
Shape 3 dough balls and let them airtight raise for around 8 hours at room temperature.

Preheat the oven to 400-420 degrees C.
Press the dough balls by hand and stretch them until they are 1cm thick. Create mules with the fingers like Focaccia. Now add Za’atar-Oil or the cheese. Or you could also add both at the same time.
Bake the Manakish until they are golden.
