


hey everyone! This is maybe my tenth time making macs and i got almost everything right except for the tops of the shells. Otherwise the feet are there, shells aren’t hallow but do have a little gap, cooked all the way through and came right off of the sil mat. I’m thinking that i just under mixed during macaronaging?? what do y’all think??

Could be two things:
1. Are you passing your your almond flour & powdered sugar through a fine sieve, discarding the large bits of almond flour?
2. They do seem to be slightly under macronaged. The way I gauge its readiness is by letting it settle in the bowl for about 10 seconds. If it’s not perfectly smooth, then I give it a few more strokes.
