🥗 Salads get a bad reputation for being boring, healthy options, but I think they deserve better. This recipe is a great example of how bringing together some delicious ingredients, treating them with some love and technique, and combining them can make for an incredibly satisfying meal.

🍅 Ingredients
• Freskezza Classic Mix
• Farro
• Toasted almonds
• Roast tomatoes
• Fresh cucumber
• Summer fruit (peaches, cherries, or melon)
• Roast chicken
•Shaved parmesan
• Crumbled feta
• Sherry vinegar, EVOO, mustard, salt, pepper

🔪 Method
➊ Place cherry tomatoes onto a hot tray with olive oil, sherry vinegar, salt, and pepper.
➋ Boil your grain of choice in salted water until it’s cooked through. Drain and allow it to cool.
➌ For your dressing, combine sherry vinegar, mustard, salt, pepper, and extra virgin olive oil together.
➍ Assemble the salad by adding salad leaves to a large bowl, then add farro, roast vegetables, sliced fruit and veg, shaved parmesan, roast chicken, and plenty of your dressing.
