Got a GMG Peak Prime for my birthday this week and, having been a gas griller forever, decided to break in easy….

Burned it in Friday, cooked baby backs and corn ribs for dinner (devoured by the family) then chucked a brisket on for overnighting with a simple Dalmatian rub

The external temp dropped to 2C / 35.5F overnight, and the hopper emptied by 2am (and I slept until 6….). Got the smoker back up, brought the brisket back up to temp in our indoor oven before going back on to finish the cook (including wrapping at 175F internal)

Rested, served for dinner, and goddamn, never had anything that tender. I know the brisket cook will be better next time by doing a day time cook, the bark could have been better (slightly less pepper, better coverage), but very pleased with the changeup

Tips always welcome, as this is a lifelong learning experience now, and thanks to this community for all the tips picked up while prepping for this

  3. Looks amazing.. but since it’s in the UK, I’ll assume it tastes bland, has bad texture, and is dryer than it looks.. I’m rooting for you, though! I’m hoping to be proven wrong next time I go there..
