Today, I wanted something sweet. Even though I’m trying to go whole food plant based recipes, sometimes I have to or want to, go against it. You’ve probably all seen this before, but since I’m a newbie, I’m posting to maybe remind some of you.

Cases in point : non dairy chocolate chips. It was only a 1/4 cup. Not worrying about it at this point. I used regular since we had them. I will buy others though.

Coconut sugar : okay this one is more problematic. As a diabetic, I shouldn’t have any/many sugars. So I used a monk fruit/allulose blend. Not exactly WFPB, but ehn. Whatcha gonna do?

There are still plenty of other mainstream sugars from the sweet potatoes, almond butter, balsamic vinegar, and maple syrup.

Other substitution from recipe : spelt flour. I had none so just finely blended some oats. I think I should have blended even finer. Maybe I’ll get a mill someday.
