Fërgesë me Speca

Ingredients:
– 3 bell peppers, chopped
– 1 large onion, finely chopped
– 2 garlic cloves, minced
– 2 tablespoons olive oil
– 2 large tomatoes, chopped
– 1/2 cup feta cheese, crumbled
– 1/2 cup milk
– 1 teaspoon paprika
– 1 teaspoon dried oregano
– Salt and pepper to taste
– Fresh parsley, chopped (for garnish)
Instructions:
1. Sauté the Onions:
– Heat olive oil in a large skillet over medium heat.
– Add the finely chopped onions and sauté until translucent.
2. Add the Peppers:
– Add the chopped bell peppers and continue to sauté until softened.
3. Add Garlic:
– Add minced garlic and cook for an additional minute until fragrant.
4. Add Spices:
– Add paprika, dried oregano, salt, and pepper. Stir well to coat the vegetables with the spices.
5. Add Tomatoes:
– Stir in the chopped tomatoes and cook until the mixture thickens, about 5 minutes.
6. Combine with Cheese:
– Lower the heat and add crumbled feta cheese.
– Pour in the milk and stir well to combine.
7. Simmer:
– Reduce heat to low and let the mixture simmer for 10 minutes, stirring occasionally.
8. Serve:
– Transfer the fërgesë to a serving dish.
– Garnish with freshly chopped parsley.
– Serve hot with fresh bread.
