• 8 ounces ground chicken
  • 3 eggs over easy
  • Cholula taco seasoning
  • 1 small can of diced tomatoes/peppers
  • Pickled jalapeño
  • 24g feta cheese crumbles
  • Trader Joe’s Salsa Verde

Came out to 60 grams of protein and about 550 calories! A solid breakfast

    See the post for the amount I ate; here’s what the actual recipe is

    – Take one pound of ground chicken
    – brown chicken in large skillet
    – empty Cholula taco seasoning pack
    – 3/4 cup of water, mix seasoning and break chicken apart
    – bring to boil then simmer
    – small can of roasted tomato/peppers (optional but only added about three carbs)

    In separate skillet, cook three eggs over easy

    – drain some of the excess liquid off the chicken
    – chicken in a bowl, eggs on top
    – dress with pickled jalapeño, feta, salsa

    When you mix it all up the excess moisture from the chicken and the egg yolk run together and make a thick sauce. It was one of the better breakfast dishes I’ve made in awhile
