How To Make Kadhi Pakora – Punjabi Kadhi Pakora – Kadhi Pakore Recipe

Kadhi Pakora is a yogurt based curry. There are different ways it can be made and it varies from region to region This recipe is a Punjabi style of making Kadhi Pakora.
Ingredients – Serves 6 to 8
For gravy –
* 280 gm/ 10 oz/ 1 cup plain unflavored yogurt. Take out yogurt from refrigerator and keep at room temperature for an hour before starting with the recipe.
* 35 gm/ 1.2 oz/ 1/4th cup gram flour (besan)
* 1/2 tsp cumin seeds (jeera)
* 1/2 tsp black mustard seeds (rai)
* 2 to 3 dry red chillies
* 1/2 tsp turmeric powder
* 1/2 tsp asafoetida (hing) – optional
* 2 tsp ground coriander (dhania powder) or 1 tsp coriander seeds lightly crushed
* 2 large garlic cloves – optional
* 2 tsp finely grated ginger
* 2 teaspoons salt or as per taste
* 1 tbsp sugar (optional)
* 6 to 7 curry leaves (optional)
* 1/2 to 1 cup frozen vegetables (optional)
* 1.5 liter regular tap water
* 2 tbsp oil
* chopped coriander leaves
For tadka –
* 1 tbsp ghee.

* 1/4th tsp fenugreek seeds (methi)
* 1 -3 dry red chillies
* 8 to 10 curry leaves
* 1 tsp kashmiri red chilli powder. Can even use sweet paprika in place of chilli powder. Please adjust proportion of chilli powder according to your preference.
For making pakora –
* 1/2 cup gram flour (besan)
* 1/4 th tsp carom seeds (ajwaiin)
* 1/2 tsp salt
* 1/2 tsp turmeric powder
* chopped onions
* chopped greens of green onions
* chopped green chillies
* 1/8 th tsp baking soda or 1 tsp baking powder
* oil for deep frying
This tastes best with rice

As always I wonder about a non-dairy yogurt substitution. I know the milk solids are often part of the chemistry that makes a dish. Have you tried anything else?
I made it with vegan oat yogurt . Used cabbage with red and green onions for the Pakoras. It turned out to be spectacular! Absolute perfection of a curry! Everyone said that it was better then restaurant food ! Thank you for such tasty recipe 😋

This looks so delicious. I can’t wait to try it. But I have one question, I want to cut back on oil frying where possible. Is there another way to make the pakora without all the oil? Could they be air fried maybe?
