First time doing it.

3 hours in. Looking nice. Debating on wrapping. May wrap 2 as an experiment.

    I just smoked one last week
    I’d suggest a foil boat, it’ll keep the bottom from getting too crusty while still allowing the top to be exposed to smoke and the counter will keep juicy

    I’m curious why people say “xxx as a brisket”? Isn’t it just smoking pork belly? What makes it related to a brisket as opposed to a pork shoulder or a chuck roast?
