    Dough recipe:

    570 g dough ball with 48hr cold ferment

    58% hydration

    3% salt

    2% sugar

    2% olive oil

    0.5% IDY

    The lack of pepperoni symmetry makes me feel uncomfortable

    That said, I ‘d eat the whole thing

    Really spectacular crumb and the bottom is great. I would suggest brushing olive oil on the crust for darkening, crunch and flavor, and less semolina on bottom.

    I’d love to try looks amazing. I prefer a higher hydration but it still looks airy af. That bottom looks awesome for a stone
