




My first try making macarons! Made them for a coworkers bday. I think they came out pretty good! I gained confidence and tried again and my macarons didn’t rise and some cracked. I also had the issue where they were resting over an hour and they weren’t forming a skin. This didn’t happen the first time. I think the humidity was at 80%. I am currently waiting for the humidity to go down before trying again. Any tips are appreciated!

Nice first try. I think the pictures show the batter was just a bit too runny, but it was very close. Don’t get discouraged, these things take a ton of practice and I still have fails. High humidity is definitely a problem for me as well.
I’m guessing from your first picture you don’t have a piping bag? It would definitely improve uniformity and shape if you piped the batter onto a silpat. If you did pipe it, then just a bit more practice piping should help. I usually get nice even coverage of the circles on the silpat.
Humidity is definitely a HUGE factor. Definitely a good idea to wait til it goes down to try again.
It’s almost eerie, almost everyone succeeds the first time the make macarons and then chase that dragon every time after, lol. Good news is, eventually you get more reliable macarons. My personal baking notes when making macarons:
– don’t over mix eggs
– Don’t over macaronage
– Use half sheet pans with parchment paper
– Bake one tray at a time, middle rack
– Leave on tray 15 minutes before moving to racks
