Salmon and Broccoli Rice Bowls 🐟🥦🍚
Honey Garlic Ginger Sesame Salmon 🍯🧄

Ingredients:
-1 lb fresh salmon, cut into large chunks
-3 cups uncooked white rice
-5 cups chicken bone broth
-1 tbs minced garlic
-1 tbs minced ginger
-dried bay leaf
-finely chopped green onion for garnish
-sesame seeds for garnish
-sriracha sauce for garnish
Honey Garlic Sauce:
-1/3 cup low-sodium soy sauce
-3 tbs rice vinegar
-2 tbs honey
-1 tbs cornstarch
-1 tbs brown sugar
-1 tbs sesame oil
-1 tsp white pepper
-1/2 tsp red chili flakes
-1/2 tsp msg (optional)
Instructions:
-rinse the rice until the water runs almost clear
-add bone broth until you can touch the tip of your finger to the top of the rice and the broth reaches your first knuckle
-add a bay leaf and cook in a rice cooker or in a covered pot on the stove top
-mix sauce ingredients and set aside
-bring a large pot of water to boil
-set a pan on medium-high heat and add 2 tbs of oil; sear the salmon skin-side down for 3-4 minutes until the color turns white halfway up the sides
-flip salmon over, add in garlic and ginger, and cook for 1-2 minutes
-add in the sauce and lower the heat
-mix and simmer until the sauce thickens; turn off the heat and set the salmon aside to cool
-add broccoli into boiling water and cook for 3-4 minutes until slightly tender; strain when done
-build the meals and garnish with green onion, sesame seeds, and optional sriracha
-store in fridge for up to 4 days or in the freezer for up to 6 months
