This has been my lunch or dinner every day for the last week and I’m obsessed so thought I would share. I’ve stopped actively calorie counting as I’m at a point where I’m eyeballing portions of things I eat a lot but all ingredients can obviously be adapted to whatever your goal is! Super quick and easy to make (my kind of food prep 😂) – spinach, cucumber, tomatoes, mange tout, kidney beans, chickpeas (sometimes I swap for lentils), a small potato, garlic and I made a quick tomato sauce
