Not as impressive or innovative as using cauliflower rice, but adding chopped cabbage to real rice is a pretty solid way to add a bunch of extra volume and some nice crunch to the rice.
Made the chicken with some zero calorie BBQ sauce and BBQ seasoning (literally just coated some precooked chicken in the sauce and seasoning and threw it in the microwave). Mixed the rice (which I precooked earlier in the week) with the cabbage, zero calorie ranch and some all purpose seasoning.
Also pickled ginger on the side for some TANG.
