I picked the rest of my inferno bananas and stuffed them all. I really enjoyed these peppers and decided to save some seeds, I didn't realize till after I already chopped them up they need to be fully ripe.. should I just toss them? Theirs still a few small peppers on the plant but I doubt they will get ripe before it starts to frost.

That looks delicious! Definitely saved those seeds.

With this many, you’ll probably have a good chance of at least a few that will sprout.

I would save them. I saved seeds from immature peppers all the time before I knew better. The only ones I had issues with germinating due to immature seeds were super hot varieties.

Save em, and try a few out a s see if they sink over night in water or sprout. They should have a dark embryo in the center after soaking or shining a bright light on them. As for the rest of the peppers, let them grow as long as possible and put em in a paper bag or in a windowsill they’ll ripen up more that way.

I would definitely keep the seeds, might as well try to sprout from them right?
