I buy my wife bagels every weekend from a local place that has the best bagels. A place I’ve been going to since I was a kid. Bagels are one of the things I miss most since being diagnosed with T2 and reducing carbs. A friend of mine sent me this recipe and I had to run out to buy the flour and give them a shot. They are smaller than I’d hoped but with the calories/carb count I could have 2 and be happy. They aren’t real bagels but they are a pretty damn good substitute. I do need to work on my rolling the dough into ropes and sticking the ends together. I did a bad job on my first attempt.
1 Cup King Aurthur’s Keto Wheat Flour 1 Cup NonFat Greek Yogurt 1 egg Pinch of Salt 2 ½ tbsp Baking powder Everything but the bagel seasoning
Preaheat the oven to 375F, line a cookie sheet with parchment paper. Heat a large pot of water for on the stove top on high and mix in 1tbsp of baking powder. Mix the Flour, Yogurt, ½ the egg salt and remaining baking powder until a dough forms. I used a stand mixer. Then sprinkle a bit of flour out and knead the dough. Once the dough is formed cut it into 4 equal pieces. Roll each into a rope and connect the ends. (I failed at this and they came apart). Put the 4 bagels into the water. Once they float (happens fast) wait 30 seconds and flip and wait another 30. Pull out of the water and place on a rack for 5 minutes to dry off. At this point I had thought I ruined them cause they looked like a gooey mess. But after 5 minutes I brushed the bagels with the other half of the egg and sprinkled on the everything but the bagel. 25 minutes in the oven and they came out the way you see them.
