The way my mom was served cacio e pepe in a restaurant in Rome – is this normal?

  1. This was in a highly rated restaurant. The only primi dishes they serve are the four Roman pastas. Good reviews by Italians.

    However, I have never seen cacio e pepe served like this, which dry pasta and the sauce on top. The al’amatriciana did look fine, as did the other dishes they had.

    So what’s up with this?

    This looks like some tourist trap nonsense.

    I went to a couple of places that the locals insist are still “tourist traps” and every one I got proper emulsified sauces.

    I would have had it go back to the kitchen.

    The cacio e pepe is all about mixing the pasta and the cream, that picture seems taken at a (poor) work canteen.

    Btw, when restaurants try too hard to “seem” Roman, such as using Roman dialect in their website or menu…I tend to be suspicious of the quality. Real traditional roman restaurants are straightforward and don’t need that crap

    Are you sure this is a cacio e pepe? It looks like stracciatella or bechamel. Anyway, definitely not what I would expect to receive if I order a cacio e pepe.

    This does not look what cacio e pepe looks like. And I’m not talking about the fact, that pasta and sauce aren’t mixed. The sauce itself looks like a completely different dish, with cream in it..

    This is a way to serve the cacio e pepe.
    Pasta is NOT dry underneath.
    They simply added more sauce on top.
    I know that restaurant and I can assure you that their kitchen is typical.

    That seems to be pasta with mornay sauce, which doesn’t make sense in cacio e pepe but would be good for lasagne

    It is a tourist trap the sauce looks good but normally is is mixed with the pasta not on top,they put it that way because they think it is more palable like this.
