I’ve started smoking a bunch of onions whenever I get the smoker going, now. The weekend before last I smoked a bunch of onions (as well as garlic, tomatoes, and a variety of peppers) to make salsa. It came out so good I made more this past weekend and smoked some fish heads and the leftovers from filleting to make smoked fish stock, and smoked a head of cabbage and some sausage to go with the onions. Can’t get enough. Smoked onions (and garlic) are also really good to dehydrate and use for stocks and broths.
