8 oz orzo
1 cup halved cherry tomatoes
1 cup diced mini cucumbers (approx. 2 cucumbers)
1 cup chickpeas 3/4 cup crumbled feta cheese
3/4 cup artichoke hearts, chopped
2 tbsp parsley
~Dressing~
1/3 cup high quality extra virgin olive oil
Juice from 1/2 lemon
1/2 tsp salt
1/2 tsp black pepper

1. Cook orzo according to package instructions. Drain and rinse orzo.
2. Add dressing ingredients in a small bowl and whisk to combine.
3. To a large mixing bowl, add all ingredients plus dressing and toss to combine.
