1 lb chicken breast or tenders, cut into strips
1/2 red bell pepper, sliced
1/2 yellow bell pepper, sliced
1/2 green bell pepper, sliced
1 small yellow onion, sliced
1 packet fajita seasoning
3 tbsp olive oil
6 oz shredded cheddar, pepper Jack or Mexican cheese blend
For serving: avocado, cilantro, jalapeño (optional), warm tortillas

1. Place the peppers in one bowl and the sliced onion and chicken in a second. Drizzle the peppers with 1 tbsp olive oil and 1/2 the fajita seasoning packet and toss to coat. Do the same with the onions & chicken.
2. Heat the remaining olive oil in a large skillet over medium high heat. Add the peppers and sauté for 3 minutes, stirring 1-2 times.
3. Add the onions & chicken and sauté for an additional 5-7 minutes, or until the chicken is cooked through, tossing occasionally.
4. Top skillet with shredded cheese, cover with lid for 2-3 minutes, or until the cheese is melted.
5. Top skillet with desired toppings such as avocado, jalapeño and cilantro. Serve with tortillas.
