Today I made some Jotisserie wings in my tumbling basket. I did not have time to dry brine so I simply seasoned with Lanes seasoned salt, cooked at 300 f for 20 minutes and then cranked up the heat, removed from basket and then seared on the grill. I added Truff Hot Sauce at the end, after the photo was taken – amazing stuff. Should I have seared them a bit more at the end?
