
Freezer to perfect chateaubriand in an hour. Unexpected night home alone turns into a win. Local corn (sous vide then roasted) and a free bottle of decent Cabernet rounds it out. 117 for an hour, then broiled in cast iron 1 minute a side.

OP, just curious, did you test the internal temp of the beef when you took it out of the bath?
Looks great, simply wondering what a 1 hour 117 cook would bring a frozen steak up to.
Love it! But, presumably like you, I like my beef mooing if it’s just me.
