I feel like I’ve seen a few similar creations on here lately and it inspired me to make my own for dinner last night!!

140g slow cooked pulled pork – I cooked for 9 hours in smokey bbq sauce prior to serving (244 cal), 60g cucumber (9 cal), 15ml callowfit garlic aioli (8 cal), 50g canned corn kernels (30 cal), 50g canned black beans (43 cal), 20g chobani light greek yoghurt (11 cal), 140g chopped cos lettuce (24 cal) and 45g cherry tomatoes (8 cal) = 378 cal total!! πŸ€—

also seasoned with some tajin, salt, pepper and mingle garlic and herb seasoning πŸ§‚

could’ve added rice and some extras but I budgeted under 400 cal for this meal and this fit the bill perfectly!
