Learn how to make a warm eggplant salad that’s both easy and packed with flavor. Perfect as a side dish or light meal.

Ingredients:
Eggplant, carrot, tomato, pepper, 1 pc.
Garlic 2 cloves
Feta 100g
Olive oil, soy sauce, lemon juice
Mix of seeds for salad,
Parmesan and crackers 20 grams

Method of cooking:
-Cut the eggplants into 1 cm thick slices and season with salt.
-Chop the pepper and carrot.
-Preheat the oven to 180 degrees C. Cover the baking dish with parchment
-Put the vegetables in the baking dish, pour soy sauce, sprinkle with seeds and bake at 180 degrees Celsius for 30–40 minutes.
-Put the baked vegetables in a salad bowl, add chopped tomato, feta, garlic and herbs
-Season the salad with oil, lemon juice, add croutons and Parmesan cheese
