Instead of the traditional minced beef, we’re using homemade beef sausage made with our special burrito mix, infused with that amazing teriyaki flavor. ### Ingredients:
**Makes 3 Burritos**
– 1/2 tablespoon olive oil (for cooking beef)
– 250g lean minced beef
– 3/4 cup shredded cheese (Mexican mixed cheese recommended)
– 3 large soft tortillas (25cm)
– 3/4 cup cooked short-grain rice
– 1/4 cup cooked black beans
– 3 tablespoons light sour cream

**Salsa:**
– 1/3 cup cooked corn kernels
– 1 large tomato, diced
– 1/2 onion, finely chopped
– Chopped coriander (to taste)
– Salt and pepper (to taste)
– 2 teaspoons olive oil

**Burrito Spice Mix:**
– 1 teaspoon ground cumin
– 1/4 teaspoon cayenne pepper
– 1/2 teaspoon paprika
– 1/2 teaspoon chili powder
– 1/2 teaspoon onion powder
– 1/2 teaspoon oregano
– 1/2 teaspoon garlic powder
– 1 teaspoon salt

**Additional Seasoning for Minced Beef:**
– 1 teaspoon chicken stock powder
– Salt & black pepper (to taste)

### Instructions:
1. **Season the Beef:** Combine the minced beef with the burrito spice mix and additional seasoning.
2. **Form Sausages:** Shape the seasoned beef into sausage forms.
3. **Sear Beef:** In a pan, sear the beef sausages in olive oil until golden brown.
4. **Finish Cooking:** Transfer the beef to the oven and cook for about 5 minutes. In the last minute, add shredded cheese on top to melt.
5. **Toast Tortillas:** Heat a pan and toast each tortilla on both sides.
6. **Dip in Teriyaki:** Dunk the beef sausages into the preheated teriyaki sauce.
7. Assemble each burrito with 1 tablespoon of light sour cream, 1/4 cup of seasoned rice with black beans, 1/4 cup of salsa, 1/4 diced avocado, and 1 Teriyaki sausage with melted cheese onto each tortilla.Assemble Burritos:
8. Roll up the burrito, folding in the sides and then rolling from the bottom to the top to secure all the fillings inside.

9. Cut each burrito in half for easier handling and serving.

10. Drizzle one spoonful of preheated teriyaki sauce over the top of the burritos for an extra burst of flavor.
