Had a training at work today and decided to cook up some wagyu brisket for the team! Wife made a slaw with sriracha and jalapeños and “homemade” cornbread.
16.5lb Costco Special Wagyu Brisket. 250 F until 165ish. Wrapped and kept at 250 until 204-205. Rested in a cooler for about 5 hours

You don’t need mustard to bind to brisket. Looks like you lost some seasoning or didn’t season it enough based off of pic 2.
Do 225 if time permits…
