This morning's breakfast experiment turned out really great! This waffle was made using the Millville Protein pancake mix from Aldi.

1/2 c protein pancake mix (I used oat, but regular would also work)
1/2 c oat milk
3 oz. nonfat plain Greek yogurt
1/2 tsp vanilla

Stir to combine (batter will be lumpy). Makes two large waffles or 4 to 6 pancakes.
Serves 2

I topped mine with 1/4 c of sliced strawberries, 1/2 Tbsp lingonberry preserves, and a dollop of plain Greek yogurt. Super delicious and pretty easy to throw together. I wrapped the other waffle and will warm it up for breakfast tomorrow.

    I should have mentioned that the waffle alone is 171 kcal and 12 g protein. The additional 50 kcal is from the fruit, jam, and yogurt topping.

    Crud! I made a mistake in my original post. It’s a FULL cup of the pancake mix, not half. Everything else stays the same. Sorry, folks…
