Serves 4

Recipe –
1 red/green pepper
1 onion
400g of potatoes
1 tin of butter beans
2 tbsp of harrissa paste
1 tin of tomato diced
4 tbsp of oil
Salt, pepper and garlic to taste

Dice up potatoes and add to a baking pan, add 2 tbsp of oil and salt, cook in oven for 30 minutes at 200c, until crispy and soft inside.

Add 2tbsp of oil to the pan, slowly fry the peppers and onions until soft and lightly browned.

Add the tomato and half can of water, let it simmer for 5 minutes on medium. Add the butter beans, harrissa paste along with seasoning and gently stir through, turn on low and let it simmer for 10 minutes.

Serve all together 🙂
