I’m a newbie, just got this a few weeks ago. Problem is the temperature keeps going way over what it should be at. On the display you can see it should be at 180, but it’s at 275. The P1 probe I left out of the meat on the other side of the grill and it’s showing 249. Feel like I’m missing something obvious, any idea how I could fix this? Or is my grill defective?

What pellets? If it’s the charcoal ones, they run 100 degrees high in mine if run straight

This looks like a z-grill. They tend to run a little hot in the beginning and then settle out after an hour or so. This short delta won’t make any difference on the final outcome for any of your longer cooks
There’s definitely something not set properly, small chance of user error, bigger chance of a defect. Even if this is a brand new Z-Grill, the “actual” temp displayed shouldn’t be 100f above what it’s set to, so to deduce possible causes (bad controller, bad temp sensor, etc) there’s a few tests one can do.
Is P1 clipped above the grill, or laying directly on it? (this would affect temps slightly, but not by this much.)
During startup, did the temp ever level off at the expected 180f, or just keep climbing?
Does the temp ever go back down, if the lid is left closed?
Does the auger keep feeding pellets to the fire?
Does it sound like the fans are the fans on full, or do they ever slow or pulse?
Also, the controller and temp sensor are usually just a few screws each, so even if your grill was bought/gifted used, there are better third-party controllers (true PID) and sensors that won’t have this issue.
My Z grill did that once and then i remembered I didn’t clean it properly when i used it last after a long smoke and after it cooled down I vacuumed it out and it was fine
