Make a thick bechamel using dairy free margarine, flour and a neutral plant milk, flavour with mustard powder, salt, pepper, and fold in a grated non-dairy cheese alternative that has good meltyness.
I’m in NZ, preferred brand in my house is Angel Food, and we use regular soy milk.
If you can’t or don’t want to use a cheese substitute, add nutritional yeast to the bechamel for an approximation of a cheese flavour.
