Before refrigeration, we all had to figure out how to store our harvests so they lasted as long as possible. Uber Eats didn’t exist hundreds of years ago, after all 😉
Carrots and other root crops store EXCEPTIONALLY well sandwiched in between layers of slightly moist sand.
If you do this, it’s important not to wash the carrots beforehand. Store them as-is, with bits of dirt and roots still attached as this helps extend their longevity.
Add a 2″ layer of sand to the bottom of a container, then layer in carrots, making sure they don’t touch.
Keep layering until you reach the top of the container, then store in a cool, dark area uncovered. Your carrots will last up to 6 months like this – nature’s refrigerator!

Gave it a week, lol it would be fine anyway in so short a time.
Carrots can just be left in the ground a long time, especially protected from frosts. Effectively it is just like all the messing about with a box of sand. Parsnips are best left in the ground and not eaten until they have had a frost on them.

I tried this. Put a bin in a cupboard in basement and another on table in basement. I tried using wooden crate and with plastic crate and it ended up being a mess of sand and rotten carrots in every attempt. I got the carrots from the grocery store though. Does this only work with carrots from the garden or what? I remember using a fridge thermometer to check temp of basement to be sure it matched what was recommended online.
