Baked Salmon with Bruschetta Salad

INGREDIENTS
Salmon:
1.4kg side of salmon, washed and pat-dried
2 tablespoons extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon dried oregano
1 teaspoon dried dill
1 teaspoon sea salt
1/2 teaspoon black pepper

Bruschetta Salad:
250g cherry or grape tomatoes, diced
1 clove garlic, minced
1 small red onion, diced
20 kalamata olives, sliced
2 tablespoons extra virgin olive oil
Juice of 1 lemon
A handful of fresh basil and parsley leaves
