Okiboru was incredible. Genuinely the best Chashu I ever had.

Cool list, couple of spots I’ve never heard of! Ramen Tatsu-Ya in Austin and Menya Ultra in San Diego are my two favorites I’ve tried so far

Okiboru best tsukemen broth I had stateside. I am loyal to Tomita tsukemen at the Tokyo Station spot. Black Dynasty, not a fan of the setup so didn’t bother to try to get a table and order.

Very wild to see my shop at the top of this list. I used to just write recipes on Reddit, and now I’m here.
I also think it’s missing a few INSANELY important American ramen shops (arguably all better shops than my own).
* Yume Wo Katare, Cambridge MA * Pickerel, Providence RI * Ramen 512, Austin TX * Menya Hosaki, DC * Zao Stamina, Bethesda, MD * Cafe Mochiko, Cincinatti, OH * Noodle in a Haystack, SF, CA
There are others but you get the idea. Time to get them into these spots!

GravyBurgerBonanza
Midnite is so damn good

Seems pretty clear that the writer isn’t really a paitan / tonkotsu fan.

I’ve been to the spot in LA twice over a span of 2 years; same taste and quality. That spot is definitely deserved.
