Am I able to still can these tomatoes? I flash frozen them because I didn't know what do do with them before going on vacation. I make A LOT of pizza and I wanted to can my own San Marzanos. Will I still be able to do that even though I froze them before hand?

Yes you totally can. Please make sure to exactly follow a recipe from the USDA or Ball, those are tested and proven for safe canning.
I use this one https://www.ballmasonjars.com/blog?cid=crushed-tomatoes and add any seasoning after I opening the jar for cooking so that it is more versatile. If you want it to make pizza sauce specifically there are recipes for that also.
Because your tomatoes are frozen, you don’t need to blanch the them, the skins will slip off pretty easily after they defrost.
