Barbecue Popper Chicken Recipe
Ingredients:
-4 jalapeño peppers – cut in half and seeded
-4 chicken breasts – boneless, skinless
-1 block softened cream cheese
-4oz cheddar cheese cut into sticks
-24oz thin cut bacon
-1/4 cup Killer Hogs AP Seasoning
-1/4 cup Killer Hogs Hot Rub
-8oz Killer Hogs The BBQ Sauce

1. Prepare charcoal grill for indirect cooking using a 2 zone fire
2. Fill each pepper half with softened cream cheese and season with Killer Hogs Hot Rub
3. Butterfly each chicken breast and season with Killer Hogs AP Seasoning. Lay one pepper inside each breast and top with a stick of cheddar cheese. Close the breast around the pepper and season the outside with AP Seasoning.
4. Lay strips of bacon over the breast overlapping each slice to completely cover the breast. Tuck the bacon underneath the bottom side of the breast, and season with Killer Hogs Hot Rub.
5. Place each chicken breast on the indirect side of the grill and cook until the internal temperature reaches 155°F. Glaze the outside with bbq sauce and continue to cook until the internal temperature reaches 165°FTIP: I pull them off at 160-162 and let the internal temperature carry over to 165 which takes about 5-7 minutes of resting.

  1. Theres an older video on youtube titled atomic elephant turds i believe. Thats where i first saw this recipe and ive been doing it for years now. For me though, its jalapeño, cream cheese, i lay a fat bead of Sriracha down on the cream cheese, then bbq rub, then wrap in a chicken thigh, then wrap with bacon. Grill til done. Then a thin layer of bbq sauce on them then they go under the broiler until the bbq sauce is bubbley and starting to char a little. I call them elephant bombs.

  4. Can't stand the floppy uncooked bacon you get on thr bottom. Ever cooked the bacon by itself for 10-12 mins before wrapping? Does wonders for helping crisp up. Much better bite

  6. That was a great looking buffet with a good selection of food… but I don't think any way I'd be able to do lunch and dinner at a buffet on the same day, even in my prime when I could pack the food in.

  7. If you have to try that hard to make something good; it’s not or you doing it wrong. Japs bacon and cream cheese does not make it better. Gimmick. I love this channel but damn, you know better.

  8. Only thing i would of done different would be to put it on direct heat last 2 min just so bacon can get just a bit crispier
