Made these to go along with my breakfasts this week! These are sort of an amalgamation from a few different recipes I saw, but the base is protein pancake mix (you can use Kodiak or Krusteaz, I had krusteaz along with some off brand that I got from the Winco bulk section). Normally I would have weighed out all my ingredients to the gram like the pancake mix, apples, and butter replacer etc but I was feeling lazy yesterday so these are more of an estimate on the calories than usual.

Full recipe:

2 cups protein pancake mix
1/2 tsp baking powder
1/2 tsp salt
2 medium honey crisp apples
1/2 a cup of milk of choice (as you can see I used almond)
1 egg or equivalent egg whites (I used egg whites)
1/2 cup brown sugar swerve (would work with regular sugar replacer also but I wanted that brown sugar flavor 🤌)
Spices: I used cinnamon, nutmeg, all spice, and cardamom. I kind of just followed my heart measuring these but I like mine really spiced up so I’d say I used probably a tablespoon of cinnamon, a teaspoon of nutmeg, and 1/2 a teaspoon of the other two.

Cinnamon sugar topping: tsp of cinnamon mixed with 2 tablespoons swerve or other sugar replacer, 2 tablespoons butter melted (I used I can’t believe it’s not butter)

Grate 2 apples (can leave peel on) into a large mixing bowl, add egg, milk, brown sugar swerve, and vanilla extract and mix. In another bowl mix the pancake mix, baking powder, salt, and spices. Add the dry ingredients to the wet and gently fold until just mixed. Combine the ingredients for your cinnamon topping. Add batter to muffin tins and place small spoonful of cinnamon sugar mixture to the top of each muffin. Bake at 400F for 10 minutes, lower temp to 350F and finish baking for another 7-8 minutes.
