When it comes to ordering this at a Carnitas stand or restaurant, I have often seen there being two different kinds:

The first is soft, usually cooked in salsa. The other is the deep fried version that still has meat attached so it’s not just pork rind but deep fried pork belly. (See the pic I attached).

However, on menus, I don’t really see these being described by different terms and so sometimes, when I’m trying to order the second version, I end up with the first version.

Would love some basic insight here into the proper term to use when I want is “deep fried pork belly with both skin and meat attached.”
