Alone at home today. Whipped up a simple keto Omelette with Salad lunch for myself with whatever I can find in my larder and fridge.

Omelette
3 eggs,
Ground black pepper, salt, fresh rosemary and thyme to taste. Cooked in olive oil.

Salad
1 head of lettuce, 1 small carrot, grated, 8 cherry tomatoes.

Vinaigrette (volume estimate only, as I eye ball my ingredients and I tasted it and adjust accordingly)
Extra virgin olive oil 3 Tbsp
Dijon Mustard 3 tsp
Juice from 1 whole lemon
Balsamic Vinegar 2 Tbsp
Salt and ground black pepper to taste.

Please don’t judge my plating. I can cook but I can’t plate to save my life. 😅
