I make this fresh tomato sauce every year with either my garden-grown tomatoes or summer tomatoes I find locally. The flavors are delicate yet bright and fresh with tastes of garlic, fresh basil, and sweet simmered tomatoes. There’s nothing quite like tomato sauce made from scratch! You can gift it in jars to your friends & family, serve it with your favorite pasta or Italian dishes, or eat it on its own because it’s just that good!

INGREDIENTS
5 lbs fresh plum/Roma tomatoes (or an assortment of tomatoes mixed with plum)
3 Tablespoons olive oil
5 garlic cloves
1 small to medium yellow onion
2 Tablespoons fresh basil
salt and black pepper

  4. Another easy way to remove skin, and seeds, is to use a food mill. I have one that attaches to my mixer, and it works great to remove both skin and seeds. Just cut the raw tomatoes in have, squeeze out some seeds and toss into a stock pot. No water, just heat. Simmer for maybe 30 minutes, stirring. Softens them enough to easily run through food mill. Pureed tomato, ready to reduce for sauce.
