So I live in a zone where pepper plants die back when it gets cold, and we are getting there.
The plant is still producing a huge amount of chilies and I'm afraid some won't have enough time to ripen. So might as well harvest them still green, but are they any good green? What can I make with them?

Different heat and flavour, but perfectly good to eat.
To my understanding. All chilies are edible at any time. Just means that the deeper the color of the fruit, the hotter/tastier it is.
