Save this authentic VEGAN TZATZIKI🌱 dressing to use in falafel wraps, salads, dips, or as a base in your favorite plant-based dishes!

INGREDIENTS:
2 cup raw cashews
1 ½ cups water
3 tbs fresh lemon juice (about 1 medium lemon)
6 tsp distilled white vinegar
3 cloves garlic
1 tsp salt
Few shakes of black pepper
1 tbs dried dill
1 cup cucumber (peel and chopped)
INSTRUCTIONS:
🌱Place everything but the cucumber in a high speed blender and blend on high until smooth and creamy.
🌱Add the cucumber and pulse lightly until the cucumbers are broken down, but still chunky.
🌱Taste and add more lemon, dill, and/or salt to your liking.
🌱Store in the fridge for up to a week, and enjoy!
NOTES:
If you don’t have a high speed blender, you can soak your cashews for a few hours in hot water, or preferably overnight. Be sure to discard the soaking water, rinse, and use fresh water when it’s time to blend.
