Keto Jalapeño Popper Chicken Casserole

    Casserole Ingredients

    * 2 LBS Chicken ( breast or Tenderloin) i boiled tenderloins and shredded
    * 8oz Softened Cream Cheese
    * 1/2 C Mayo
    * 1/2 C Sour Cream
    * 1/2 C Shredded Colby Jack
    * 1/2 C Bacon (crumbled)
    * 1/2 C Jalapeno ( remove seeds & chop)
    * 1tsp Garlic Powder
    * 1/2 tsp Sea Salt or Pink Himalayan

    Topping Ingredients

    * 1/2 C Shredded Colby Jack
    * 1/4 C Crumbled Bacon
    * 1 Thinly Sliced Jalapeño (optional)

    Instructions

    1. Preheat oven to 350
    2. Boil chicken and shred or cube, set aside
    3. Combine all casserole ingredients (except chicken) in a large bowl, mix until smooth, fold in chicken
    4. Put into a greased casserole dish ( olive oil or avocado spray, top with reserved cheddar, bacon and slice jalapeño ( optional)
    5. Bake at 350 for 30-35 min or until cheese is bubbly
    6. Serve with a side salad or use as a dip

    2 Net Carbs per serving. Dish has 8 servings
