Of course this can be enjoyed year round, but it’s really when summer hits that I want a cool, refreshing, delicious Chicken Salad Sandwich. And my favorite way to up the flavor in this quintessential favorite is to brine and grille the chicken.
Grilled Chicken Salad Ingredients
4 Bone-In Skinless Half Chicken Breasts (Brined)
1 cup Mayonnaise
1 tsp Coarsely Ground Black Pepper
½ tsp Kosher Salt
½ tsp Smoked Paprika
1 stalk Celery Chopped
½ medium Red Onion Chopped
½ cup Chopped Parsley
¾ cup Roasted Unsalted Chopped Pecans

Cutting Boards:
I have several, and it depends on what I want to do. My current favorite is an 18" x 12" bamboo board. It is $10 and very light. I use it when I am doing quick things. I have a beautiful end grain my brother made me, and it gets used when what I cut gets presented on a cutting board. My wife has an 18"x24" heavy end grain. Not only is it her favorite place to cut things, but she also stores things on it. (No plastic or glass)

Wow! That does look delicious sir! Reminds me of my wifes take on this sandwich, only, she calls hers a Cherry Bleu Chicken Salad made with dried cherries (or dried cranberries) walnuts and of course, lots of crumbed high quality bleu cheese chunks. This was fantastic!
Question on the chicken cooking – I couldn't get it to 160, it hit a stall around 145, took another 90 mins to get to ~155 and then didn't budge for another 90 mins or so, and I pulled it not wanting it to dry out.
All the safe guides suggest that anything over ~144 for ~5 mins should be good to go, so is there a real need to take it much higher if it's stalling like that? (Specifically for chopped/sliced breast, pulling it or farrier cuts etc, different story)
