Chicken Sorrento
2 chicken breasts, cut in half lengthwise to create two thinner pieces
4 slices eggplant
2 eggs, beaten
1/2 cup breadcrumbs
2 tbsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
1/2 cup marinara
1/2 cup shredded mozzarella
3 tbsp Parmesan or pecorino
Red chili flakes (optional)

1. Set up a breading station with beaten egg in one bowl and breadcrumbs and seasoning in a second bowl.
2. Coat eggplant and chicken in egg then breadcrumbs. Press breadcrumbs into eggplant and chicken so you have a nice even breading.
3. Place eggplant and chicken on air fryer basket, spray with olive oil and air fry at 425°F for 8-10 minutes.
4. Place chicken on a parchment lined baking sheet then top with an eggplant slice. Top with sauce and cheeses.
5. Broil on high for 2-3 minutes, or until the cheese is melted and golden
6. Serve with pasta or side salad.
