Used some leftover turkey, cooked up on Sunday on the Weber Searwood. Used a rye based sourdough, jerk sauce, jalapenos, and a mix of mozzarella and aged cheddar. Through it on when the grill was at 180F, turned it up to 475F, and then back down to 425F. In the pellet grill for 30 minutes total.
